As Fresh as The Farm When Dining at True Seasons Organic Kitchen

COLOR3-400x250When in Orange County, make an effort to treat your body right with fresh organic, farm to table cuisine at True Seasons Organic Kitchen (TSOK) in Anaheim. Truly picky about freshness, Chef Saifon rigorously regularly visits farmers markets 2-3x weekly and shops at local farms such as Sea Wind Farms in Fountain Valley in order to bring you the best there is locally. What Chef Saifon offers at this restaurant is Hot Pot style cooking. While I probably don’t need to elaborate this for my Taiwanese people, there is a slight difference between Hot Pot and Shabu Shabu. The flavor of the broth for Hot Pot is usually more intense and the cooking time for the items inside the Hot Pot is usually longer than that of shabu shabu. Hence, the characteristic and the flavor of the broth changes throughout the meal.

The food here speaks for itself. There are no secret spices, no chemicals from pesticides, and no MSG that makes you nauseated. Just plain culinary combination of high quality meats and wild caught seafood with natural flavoring.

Start with Soup Broth

Soup Broth: Choose between Organic Miso, Spicy Miso or the Spicy Lemon Grass.  I had the Organic Miso with just a touch of spice. Perfectly balanced of spicy, saltiness, and hint of sweetness.

Dipping Sauce: The sauce that complements the food here are made fresh daily, once in the morning and another in the afternoon. TSOK offeres a house made pomegranate and a sesame dipping sauce. The secret to the addicting organic pomegranate sauce is done by cold pressing the pomegranate, mixed with organic orange juice and blend with gluten free tamari sauce. NO MSG, NO salt, NO sugar, and all flavor!

I also love they have minced garlic on the table side which you can add to dress up your soups and sauce more! I added lots more to my rice as well. You can choose between white or brown rice.

Choose a meat dish, like chuck or ribeye

Meats/Seafood: The wild caught shrimp and wild caught scallops were amazing. So fresh, that it actually takes longer to cook the seafood than the meats here. As for the hormone-free meats, offerings from TSOK include chuck and rib-eye in organic, prime, and grass fed versions.

Vegetables: The vegetables are truly the star here. The organic, sustainably-grown, locally farm-fresh vegetables were crisp to the touch, bright to see, and truly addicting when paired with the sauces.  You get a side of organic vegetables such as Chinese broccoli, swiss chard, carrots. Some Vegan friendly plates will add the aforementioned and also kabocha and spaghetti squash. Note: vegetable variety do change by season.


Make this your last dish, Udon Noodle Soup

If you also happen to order Udon noodles on the side, you should save them until almost the end of the meal.  When I was small, my mom has taught me all the nutrients you boil in a hot pot are left in the stock.  This will be the best and healthiest bowl of soup noodles you’ve ever had!

Freshly squeezed Sugarcane juice to order, with nothing else added!

Drinks: To complement the meal, order yourself a freshly pressed Sugarcane Juice. While most think it’s high in sugar, the natural sugar has a low hypoglycemic index to prevent a rise in glucose level in diabetics. The alkaline level in sugar cane juice which contains high levels of calcium, magnesium, potassium, iron, and manganese helps fight off diseases like cancer in previous studies.  Other drinks at TSOK include: Sake, Beer, Wine, Tea, Iced Coffee, Lemonade, and variety of Organic Smoothies.

Desserts: For a refreshing after dinner dessert, do try their Shaved Ice here.  They offer a mixed berry and mango flavor shave ice.   I love mango and  TSOK uses only two ingredients for their mango shave ice: Fresh Mango and Agave Nectar.  Pureed together, then frozen, and shaved when ordered, the shave ice was the perfect after meal treat to cool off your tongue.

Chef Saifon truly is an inspirational chef.  Not only does she supports the local farmers, she is also passionate about the homeless and low income families who can’t afford healthy meals. Her non-profit, The Free Pantry, has been feeding the homeless, the elderly, and low income families. For the past thirteen years, she has been able to GIVE healthy meals with love.
